Its a plane, its a train, its an elliptical bike?

I don’t exercise at a consistent time every day. I like to do different activities at different times of the day. If I want to run outdoors, I will go in the morning before its gets too hot. I save weights for after work. This morning was a running morning, although by the end I felt like I had been for a swim. You know when the air is so thick and heavy that you feel tired immediately? Well this was one of those days.

I did see lots of baby deer though. Don’t see many of those on the treadmill…

I also had the strangest encounter (no I didn’t get chased by a deer). I was on a trail by my house and I heard wheels followed by “On your left.”

I immediately thought it was a cyclist and moved to the side. After a few seconds, he still hadn’t passed. I knew I wasn’t going too fast and a bike should have easily passed me already. All of a sudden…

an elliptical bike passed me! I had seen one in a store once, but never in use! I need to start bringing my phone with me on runs to capture these moments!

Once I got home I had to investigate… I love cycling and wouldn’t the elliptical be so much better outdoors?

“Sweet shrimp!” Shrimp and sweet potatoes cooked in coconut milk and Thai curry paste.  One of my favorite dishes!

Followed by Tropical Banana Fro Yo. Since it still feels like summer, might as well eat like it!

Ingredients

-1 frozen banana

– 1/2 cup frozen mango chunks

-coconut for garnish ( It used Lets Do Organic coconut flakes)

Add banana and mango to your food processor and let er rip for about 3 or 4 minutes. The final consistency should be smooth and creamy. Top with coconut and enjoy.

I think macadamia nuts would also make a great topping!

    The “sweet shrimp” were great! Everyone at work wanted some, but I have to admit I was slightly selfish 🙂 It’s definitely a recipe everyone should try at least once.

    Have you ever seen the infomercial for that fitness weight that shakes in your hand? It’s honestly the weirdest/strangest/most ridiculous thing someone ever deemed a workout. I can’t help but to laugh whenever the commerical comes on TV.
