Saturday Supper Club: Mexican Style

Ryan and I are in a supper club with a group of friends. It was our month to host and we decided on a Mexican theme!20110910-100812.jpg

Cereal mash up with Quaker Oatmeal Squares and Mom’s Best Oats and honey blend.

Pico de gallo with diced tomatoes, jalepenos, onion, cilantro, and lime juice.


DIY Mexican salad bar with lettuce, tri-colored peppers, mango, red onion, black beans, queso fresco, and chipotle lime vinaigrette.

I forgot to take pictures of the margaritas! Time for some rest before an early am bike ride.

Question: What is your favorite type of cupcake? Mine is carrot with walnuts and cream cheese frosting.

      6 of my friends take turns cooking a three course meal once a month. It’s a great way to get caught up and to enjoy some delicious food. I’m so lucky I have some friends who are awesome cooks!

    Yum! A carrot cupcake with walnuts and cream cheese frosting sounds delicious! I love all kinds of muffins. Especially ones with peanut butter, dark chocolate chips, blueberries, raspberries and bananas 😀
